It looked good, but when I tried to turn the original picture right side upwards it all slud off the plate! Ended up kinda like one of those KFC bowls.

The potato looks a little hard for my liking, but everything else looks great. And of course it's hard to tell from a picture. Heat that potato up a little more, then butter it, put on plenty of salt and pepper, and then a healthy scoop of sour cream and you've got yourself a winner. Mash it all up and enjoy. I like my potatoes soft so that everything mixes together nicely. But that's just how I like it, you may prefer a different style which is completely fine.

Fair enough, the aluminum foil is the right way to do it for sure, that way it holds the moisture. And your time and temp looked good as well. One suggestion, there are some types of plain yogurt that taste almost the same as sour cream but are a healthier alternative. My mom has been getting them for us the past few years. So that would be a way you could keep eating something basically the same as sour cream but a healthier alternative instead, so that way you wouldn't have to go without it.

carb thus a sugar-producing item once in the gullet..
but looks like you’re having only a half of it which helps.
Oh, breads do the same as that Tater, as you know, which is reason I sadly gave them up 90% of the time including pizzas on regular dough bottoms.
Tip: when eating a hamburger on a bun..leave the top portion of bun off.
