I don’t see the appeal of mustard based bbq sauce. It seems like it’s the leftover bottle after all the good sauces are gone.

Agreed it's fantastic on grilled chicken. The red BBQ sauce is just elevated ketchup IMO.

If you are from the low country it is hands down yellow. Sweatmans bbq in eutawville is hard to beat. Especially the hash

My aunt and uncle own sweatmans bbq and my dad lives about 2 miles away lol fantastic barbeque and I go every single time I'm back in the Holly Hill/Eutawville area

Sort of like Jesus bringing out the best wine at end of wedding. And I can’t figure out why but love it.
Duke’s hash over rice with little bit mustard barbecue sauce. Great eating.

I say that tongue-in-cheek because my current favorite local Q is a whole hog,peppery vinegar baste. They offer sweet and hot sauces, but I go there because the Q is moist and tastes like it just came off the smoker. There is no sauce that tastes better than that Q, IMO. Sauce is an easy way to disguise dry or mediocre Q.

live in the midlands of SC? If you lived in the Lowcountry you’d be exposed to (and maybe even enjoy!) mustard based BBQ - like Swearmans, Bessingers, Dukes, Melvins, etc. I’ll admit it is a somewhat acquired taste -and it helps if you’ve got some German heritage. Germans love their mustards!

And I LOVE people that don’t like hash- just means more for me!

I’d be willing to bet you’ve not partaken of upstate SC BBQ harsh - not the watery red junk they try to pass off as “hash.” Don’t get me started on true hash vs. Brunswick Stew!

Having grown up in Greenwood SC, I was exposed at an early age to “Greenwood style” BBQ hash. If you’ve ever been fortunate enough to try it, it will ruin you for every other hash much less Brunswick Stew.

In the 50s and 60s there were numerous small “Hash Houses” in and around Greenwood - especially in the mill villages. They were all very good because all they sold was hash and you got it with rice or bread.

When I moved to the Lowcounty in the 70s I loved the fresh local seafood but could not believe what they called BBQ hash. A watery concoction with more of a gravy consistency than that meaty hash from Greenwood.

The good thing was that it forced me to search for recipes to make my own. Below is the closest I found. I’ve cut it down to where I can use an 8 pound Boston butt in a large crock pot and after 14 hours I have a hash that’s close to that of my youth!

UPSTATE SC GREENWOOD FIREHOUSE BBQ HASH
25 pounds pork (no bones)
25 pounds beef (no bones)
10 lbs. baking potatoes
10 lbs. onions
1 pt. vinegar
1 pt. mustard
6 oz. Texas Pete
6 oz. Worcestershire sauce
Salt and pepper to taste
1 1/4 lbs butter (not margarine)

Cover meat good with water. (We normally do this in a large 80 gallon black cast iron pot.) Stir meat with a boat paddle to remove any fat or skin. When meat is done and begins to come apart, you then add the cut up onions and potatoes. Add your seasonings and butter. Keep stirring to keep meat from sticking. When it has cooked down to the consistency you like, it's done.

Firehouses made this hash in huge black cast iron wash tubs, cooked slow all night, stirred with a boat paddle and sold on holidays as a great fund raiser.
