Probably going with the prime rib because we do that in honor of my wife's mother who never got to spend Christmas with us as a family.

we have done Lasagna since I was a lad, so we keep that tradition going.
Christmas Day will just be me and Mama so probably a steak and potatoes kind of day.

Tamales and cheeseburgers probably. We’ll grind down some corn from a farm here to make the masa, and then fold in a lot of butter and some sweet potato to make a flavored masa. Probably roast some sweet potato and toss on a red Chile adobo for the filling.
Cheeseburgers with American cheese, a soft bun of sorts, pickles, house Mayo, softened onions.

It started with my great uncle, who was a cop in Harrison, NJ. He was an eye-talian fellow (we don't share any blood) and I think it started as a feast of seven fishes deal. His son, my dad's cousin, took over smelt duty and his family used to spend Christmas Eve with ours. At some point they stopped coming but everyone loved the smelts, so my aunt took on the responsibility. My aunt has become infirm over the past few years and she gave me smelt training while she still could, knowing that one day it'd fall to me. This will be the third year I've made them.
Christmas Eve for us is a smorgasbord of foods that don't go together at all: Smelts, BBQ pulled pork (mustard), Swedish meatballs, and either penne vodka or baked ziti and any other oddballs people decide to bring.

Unsure of dessert. For Sunday brunch we are contributing coffee slush and, I think, Spanish style French toast.
