For the past couple of years, my bil, myself, and a couple friends have made it an annual event to attend a Clemson away game. This year we are planning on going to the Louisville game. Looking for suggestions on hotels, places to eat, Bourbon trails, etc. TIA

is to go early and attend the famous Churchill Downs and its horse races, and have a little fun in that. Then WALK to the stadium for the game later. I did this and it was kind of a "two birds with one stone" thing, and worked out great. But I had not place to tailgate or anyone to tailgate with when I went.
I would do Churchill Downs as well. Tailgating at UL is about as close to Columbia as it gets - warehouses, no trees, grass and gravel lots near a fairgrounds with lots of litter. Walk over to the cabooses near the stadium and see how their doners tailgate. We stayed at the Four Points Louisville Airport hotel which is walking distance to everything for the game.
There are some really good restaurants in town and it was neat to drive through their campus and athletic facilities. Be prepared to see the ACC logo on EVERYTHING - they are really proud of being a member.
Go to the riverfront and check out the Louisville Slugger museum!
