A mostly empty parking lot and create at Food Tuck Food Court of sorts. Trucks would rent a slip that gave them power and running water. In my mind, this would need to be an area people were going to anyway. The bar portion never crossed my mind because I don't think of people hanging around the food truck long after they get the food. I did get some confirmation that my other idea could work. Seems food trucks have to claim a restaurant to work out of. Of course they are charged for this.

I'm dreaming of a place that looks like the "Chopped" kitchens. A number of prep/cooking areas and storage so the trucks could do more buying in bulk. I'd give them a place to get rid of grease, which I'd then try to sell to bio-diesel folks. Maybe even try to make my own. There would also be a place for a business center of sorts to they didn't need to go to a print shop to have small stuff done.

If I could make money doing it, I'd allow the clients to send me up orders of stuff they needed packed. Maybe not food items, but thinks like portion cups, whatever they serve out of so on and so forth. Also, if the demand was there, I'd have an emergency supply delivery. Say you are set up down at Bill's joint and forgot your lettuce? I'll send somebody down there for an Uber like fee.

Lastly, if the space could handle it and business was big enough, I'd have a mechanic on site to help them keep their trucks running.
