I’m sitting on the couch enjoying every morsel while watching NCAAT games.
1. Coat med-high pan w olive oil. 2. Sauté half a red onion and a diced pepperoncini for 2-3 min. 3. Add 2 tbsp butter, 1/2 c diced mushrooms, and S&P and simmer 2-3 more minutes. 4. Add 1/2 c crumbled precooked chicken sausage and a splash of balsamic vinegar, simmer 3 more min. 5. Add huge bunch of spinach and cook until fully wilted. 6. Dump pan into freshly cooked spaghetti, coat w EVOO, top w feta crumbles. 7. Consume with reckless abandon. Pair w wine if you’re so inclined.
Lowered nose it’s the small pleasures that make long days worth it.
